Nasi Lemak Kukus

This is the late post of my cooking recipies...

During the 'Hari Raya' Holiday, my mother in law have given me some 'Ayam Rendang' & 'Sambal Ikan Bilis' and my neighbour have given us some 'Rendang Daging'.  So, I have decided to cook 'Nasi Lemak Kukus.

Ingredients:-
~  Uncooked rice
~  Asam Keping
~  Coconut Milk
~  Pandan Leave
~  Salt to taste


Methods:-
  1. Soak at least 4 -6 hours the uncook rice with 'Asam Keping' with water.
  2. Once done with the rice soak, rinse with water and dry up.
  3. Then mix the uncooked rice with coconut milk and salt to taste
  4.  Steam the rice till cooked.
  5.  
Served the rice while is hotel with sambal or rending.

Roasted Pork

This is the successful recipe of mine of making 'Roasted Pork' 
 
 
 
Ingredients:-
~ 3 Layer Pork Belly (Fa Yuk with 3 layer)
   * Do not remove the skin & remove the pork hair
~ Coarse Salt
~ Vinegar
~ Aluminium Foil
 
(A) Mix
~  Five Spice Powder
~  Pepper
~  Shaoxing Wine
~  Salt / sugar
 
Methods:-
Clean and drain well the pork belly, using knife to clean the skin and meat surface and dry up with kitchen paper towel.

Place the pork belly  in boiling water with the skin side down under medium heat for approximately 5 minutes till it change color (for easy pricking)
 
 
 
Once done use the fork/wood stick/skewer/meat tenderizer to prick the skin and prick as much as you can.  While pricking, use paper tower to wipe off the excess water out from the skin.
 
Turn the pork belly, use the seasoning (A) to rub it on the meat area evenly, keep in the refrigerator with the skin side up for more than 5 hours or overnight in the fridge.
 
Then, use aluminium foil to cover up meat portion only.

Rub a layer of vinegar on top of skin surface only and then follow by a tick layer for coarse salt.
 
 
Preheat the oven 200C/400F, put the pork belly in the middle of the oven bake for 30-45mins (with skin side facing up).
 
Remove the pork belly from oven, take-off the thick salt layer, leaving only a little evenly coated in the skin at the same time.

Open the aluminium foil and put the pork belly and placed on a wire rack and bake for 10-15 minutes or until the skin has been golden brown
 
 
Final steps, scrap off the charred areas from the skin with knife.  Sliced the roasted pork and further cut to bite-sized pieces and enjoy yummylicious porky

Hainese Chicken Rice

This is a very special edition of rice which I have learn from my MIL special rice recipies..

Ingredients:-
~ Shallot
~ Garlic
~ Ginger
~ Pandan Leave
~ Rice (Uncooked)
~ Oil
~ Salt
~ Water
~ Chicken stock

Methods:-
  1. Finely chop the shallot, garlic & ginger (alternately you may use the small blender to blend
  2. Heat up the wok / pan with some oil then pour in the shallot, garlic & ginger.  Fry it till it turn aroma & golden brown.
  3. After than pour in the friend shallot, garlic & ginger together with the oil into the uncooked rice (make sure you clean the rice) and then add in sufficient water, chicken stocks & salt to taste.
  4. Normally, this rice will come with the steam chicken.  Once the steam chicken is cooked there will be some chicken soup in it, you may pour in the steam chicken soup into the rice before cooked it.
  5. You may serve the rice with the steam chicken or other dishes...
